Recommended Cooking Methods
For the best flavor and tenderness, cook to medium-rare (130–135°F) or medium (140–145°F). Always allow the roast to rest before slicing.
Grill (Brazilian Style)
- Score the fat cap in a crosshatch pattern without cutting into the meat.
- Season generously with coarse salt or your favorite steak seasoning.
- Grill over medium-high heat, fat side down first, until beautifully rendered.
- Continue cooking over indirect heat until the internal temperature reaches 130–135°F.
- Rest for 10–15 minutes, then slice against the grain.
Oven Roast
- Preheat oven to 425°F.
- Sear fat side down in a hot cast-iron skillet for 3–5 minutes until golden and crisp.
- Transfer to the oven and roast until the internal temperature reaches 130–135°F, approximately 30–45 minutes.
- Rest before slicing.
Smoker
- Smoke at 225–250°F until the roast reaches 125–130°F.
- Finish with a hot sear over direct heat to crisp the fat cap.
- Rest for 10–15 minutes before serving.
Serving Suggestions
Slice thinly against the grain and serve with roasted potatoes, grilled vegetables, chimichurri, garlic butter, or traditional Brazilian sides. Picanha also makes exceptional steak sandwiches, tacos, and steak bowls with its rich, beefy flavor and juicy texture.
