Recommended Cooking Methods
For the most tender and flavorful results, cook to medium-rare (130–135°F) or medium (140–145°F) and always slice against the grain.
Grill
- Preheat grill to medium-high heat (450–500°F).
- Season generously and sear over direct heat for 4–6 minutes per side.
- Move to indirect heat and cook until the internal temperature reaches 130–135°F.
- Rest for 10–15 minutes before slicing.
Oven Roast
- Preheat oven to 425°F.
- Sear the roast in a hot cast-iron skillet for 2–3 minutes per side.
- Transfer to the oven and roast until the internal temperature reaches 130–135°F, about 20–35 minutes, depending on size.
- Rest before slicing.
Smoker
- Smoke at 225–250°F until the roast reaches an internal temperature of 130–135°F, approximately 1½–2½ hours.
- For a caramelized crust, finish with a quick high-heat sear.
Serving Suggestions
Slice thinly against the grain and serve with roasted potatoes, grilled vegetables, chimichurri, or horseradish sauce. Tri-tip also makes exceptional sandwiches, tacos, salads, and steak bowls with its rich flavor and tender texture.
